Long before Pietro Querini reached Røst, dried cod was already travelling from northern Norway to Europe. The Venetian merchant’s shipwreck did not mark the birth of stockfish, but it gave an Italian face to a much older commercial story, one that would eventually become part of the country’s culinary memory.
